  • 3 lbs beef chuck roast
  • 1 onion, sliced
  • 4 carrots, chopped
  • 4 potatoes, cubed
  • 2 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pan and sear the beef on all sides until browned.
  2. Place the seared beef in the crockpot.
  3. Add onions, carrots, and potatoes around the beef.
  4. Pour beef broth over the ingredients.
  5. Sprinkle garlic powder, thyme, salt, and pepper on top.
  6. Cover and cook on low for 8 hours or high for 4-5 hours.
