- 3 lbs beef chuck roast
- 1 onion, sliced
- 4 carrots, chopped
- 4 potatoes, cubed
- 2 cups beef broth
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
