A creamy and hearty soup that combines the flavors of a classic cheeseburger in an easy slow-cooker recipe.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups potatoes, peeled and diced
  • 1 cup carrots, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream

Instructions

  1. Brown the ground beef with onion and garlic in a skillet. Drain excess fat.
  2. Transfer the beef mixture to a slow cooker.
  3. Add chicken broth, potatoes, carrots, salt, pepper, basil, and oregano. Stir to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until vegetables are tender.
  5. About 30 minutes before serving, melt butter in a saucepan. Whisk in flour and cook for 1 minute.
  6. Gradually stir in milk, cooking until thickened.
  7. Add this mixture to the slow cooker along with shredded cheese and sour cream. Stir until melted and smooth.
  8. Serve hot.

Notes

  • For extra flavor, add cooked and crumbled bacon as a topping.
  • If the soup is too thick, thin it with a little extra broth or milk.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
