Easy cheesy ground beef enchiladas with simple ingredients and quick prep.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F.
  2. Brown ground beef in a skillet. Drain excess fat.
  3. Add taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  4. Spread 1/4 cup enchilada sauce in baking dish.
  5. Fill tortillas with beef mixture, roll, and place seam-side down.
  6. Pour remaining sauce over enchiladas. Top with cheese.
  7. Bake for 20 minutes until cheese melts.
  8. Garnish with onion and cilantro before serving.
