A simple and delicious cannoli cake inspired by the classic Italian dessert. Layers of tender cake meet creamy cannoli filling for a crowd-pleasing treat.

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups ricotta cheese
  • 1 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • 1 tsp orange zest

Instructions

  1. Preheat oven to 350°F. Grease two 9-inch round cake pans.
  2. Mix flour, baking powder, and salt in a bowl. Set aside.
  3. Cream butter and sugar until light. Add eggs one at a time.
  4. Alternate adding dry ingredients and milk to the batter. Stir in vanilla.
  5. Divide batter between pans. Bake 25-30 minutes until golden.
  6. Cool cakes completely. Mix ricotta, powdered sugar, chocolate chips, and zest for filling.
  7. Spread filling between layers and on top. Dust with powdered sugar before serving.

Notes

  • Drain ricotta overnight for thicker filling
  • Substitute mascarpone for richer flavor
  • Cake tastes better after chilling overnight
