These Crumbl Cherry Cheesecake Cookies are a delightful treat. They feature a soft graham cracker cookie base, topped with a tangy cream cheese frosting and a sweet cherry pie filling.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1 (21 ounce) can cherry pie filling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, graham cracker crumbs, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Scoop about 2 tablespoons of dough per cookie and place them on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may still look soft.
  8. Let the cookies cool completely on the baking sheet.
  9. While the cookies cool, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
  10. Stir in the vanilla extract and heavy cream until the frosting is light and fluffy.
  11. Once the cookies are completely cool, spread a generous amount of cream cheese frosting on top of each cookie.
  12. Spoon a dollop of cherry pie filling over the cream cheese frosting.
  13. Serve immediately or refrigerate until ready to enjoy.
