Crockpot Chicken Corn Chowder

A hearty and creamy chicken corn chowder made easily in a crockpot.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups corn kernels (fresh or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 medium potatoes, peeled and diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp butter
  • 2 tbsp flour

Instructions

  1. Place chicken, corn, onion, garlic, bell pepper, potatoes, and chicken broth in the crockpot.
  2. Season with salt, pepper, and paprika. Stir well.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Remove chicken, shred it, and return to the pot.
  5. In a small pan, melt butter, whisk in flour, and cook for 1 minute.
  6. Slowly stir in heavy cream until smooth, then pour into the crockpot.
  7. Mix well and cook for another 30 minutes on low.
  8. Serve hot.

Notes

  • You can use frozen corn for convenience.
  • For extra flavor, add chopped bacon.
  • Store leftovers in the fridge for up to 3 days.
