- 2 boneless, skinless chicken breasts
- 4 cups corn kernels (fresh or frozen)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 medium potatoes, peeled and diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp butter
- 2 tbsp flour
- Place chicken, corn, onion, garlic, bell pepper, potatoes, and chicken broth in the crockpot.
- Season with salt, pepper, and paprika. Stir well.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken, shred it, and return to the pot.
- In a small pan, melt butter, whisk in flour, and cook for 1 minute.
- Slowly stir in heavy cream until smooth, then pour into the crockpot.
- Mix well and cook for another 30 minutes on low.
- Serve hot.
Notes
- You can use frozen corn for convenience.
- For extra flavor, add chopped bacon.
- Store leftovers in the fridge for up to 3 days.
