- 2 lbs boneless, skinless chicken breasts
- 1 cup diced carrots
- 1 cup diced celery
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried parsley
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 tbsp unsalted butter, melted
- Place chicken, carrots, celery, onion, and garlic in the crock pot.
- Pour chicken broth over the ingredients and season with salt, pepper, thyme, and parsley.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Shred the chicken with two forks.
- In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to form a dough.
- Drop spoonfuls of dough into the crock pot.
- Cover and cook on high for 30-45 minutes until dumplings are cooked through.
- Serve hot.

- Use pre-cut veggies to save time.
- For creamier broth, add 1/2 cup of heavy cream before adding dumplings.
