  • 200g graham cracker crumbs
  • 100g melted butter
  • 600g cream cheese
  • 150g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 200ml heavy cream
  • 50g brown sugar (for topping)

Instructions

  1. Preheat oven to 160°C (325°F).
  2. Mix graham cracker crumbs with melted butter and press into a springform pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time.
  4. Stir in vanilla extract and heavy cream.
  5. Pour filling over the crust and bake for 50 minutes.
  6. Cool completely, then refrigerate for 4 hours.
  7. Sprinkle brown sugar on top and caramelize with a kitchen torch.
