1 cup graham cracker crumbs
3 tablespoons melted butter
2 packages (8 ounces each) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1/2 cup granulated sugar (for topping)
Instructions
Preheat your oven to 325°F (165°C) and line a muffin tin with cupcake liners.
Mix graham cracker crumbs and melted butter, then press into the bottom of each liner.
Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
Pour the filling over the crusts, filling each liner about 3/4 full.
Bake for 20 minutes or until the centers are set. Cool completely.
Sprinkle sugar evenly over the tops and caramelize with a kitchen torch or under a broiler.
