Creamy Tuscan Salmon (30 Minute Dinner!)

A quick and delicious creamy Tuscan salmon dinner ready in just 30 minutes.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups baby spinach
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Season salmon fillets with salt and pepper, then add to the skillet. Cook for 3-4 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add garlic and onion. Sauté for 1-2 minutes until fragrant.
  4. Add sun-dried tomatoes, heavy cream, chicken broth, Italian seasoning, salt, and pepper. Stir well and simmer for 3-4 minutes.
  5. Add spinach and cook until wilted, about 1-2 minutes.
  6. Return salmon to the skillet and sprinkle with Parmesan cheese. Cover and cook for another 2-3 minutes until cheese melts.
  7. Serve immediately with your favorite side dish.

Notes

  • Use fresh salmon fillets for best results.
  • Adjust seasoning to your taste.
  • For a lighter version, substitute heavy cream with half-and-half or milk.
