A flavorful dish combining coconut and lime for a tropical twist on chicken.

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 limes (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. In a bowl, mix coconut milk, lime juice, lime zest, garlic, ginger, salt, and pepper.
  2. Add chicken breasts to the marinade, coating evenly. Cover and refrigerate for 30 minutes.
  3. Heat olive oil in a pan over medium-high heat.
  4. Remove chicken from marinade and cook for 6-7 minutes per side until fully cooked.
  5. Garnish with fresh cilantro before serving.

  • For extra flavor, marinate chicken for up to 2 hours.
