  • 2 cups chicken broth
  • 1 red bell pepper, diced
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 1/4 cup chopped fresh cilantro
  • For the Citrus Dressing:
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger

Instructions

  1. In a medium bowl, toss the chicken pieces with olive oil, oregano, salt, and pepper.
  2. Cook the rice: In a medium saucepan, combine the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
  3. While the rice cooks, heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until cooked through and lightly browned.
  4. Add the red bell pepper, broccoli, and carrots to the skillet with the chicken. Cook for another 5-7 minutes, or until the vegetables are tender-crisp.
  5. Prepare the citrus dressing: In a small bowl, whisk together the orange juice, lime juice, honey, soy sauce, minced garlic, and grated ginger.
  6. Divide the cooked rice among four bowls. Top with the chicken and vegetable mixture.
  7. Drizzle the citrus dressing generously over each bowl.
  8. Garnish with fresh cilantro before serving.
