Instructions
In a medium bowl, toss the shrimp with 2 tablespoons olive oil, chili powder, cumin, garlic powder, salt, and pepper.
Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove from heat.
In a small bowl, whisk together the fresh lime juice and 1 tablespoon extra virgin olive oil for the dressing.
Assemble the bowls: Divide the cooked rice among two bowls. Top with black beans, corn, red onion, and cooked shrimp.
Drizzle the cilantro-lime dressing over each bowl.
