  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup cooked rice (brown or white)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (fresh or frozen)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil (for dressing)
  • 1/2 avocado, sliced (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a medium bowl, toss the shrimp with 2 tablespoons olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove from heat.
  3. In a small bowl, whisk together the fresh lime juice and 1 tablespoon extra virgin olive oil for the dressing.
  4. Assemble the bowls: Divide the cooked rice among two bowls. Top with black beans, corn, red onion, and cooked shrimp.
  5. Drizzle the cilantro-lime dressing over each bowl.
  6. Garnish with fresh cilantro and sliced avocado. Serve with lime wedges.
