This Chipotle Turkey & Avocado Grain Bowl is a healthy and flavorful meal, perfect for a quick lunch or dinner. It features lean ground turkey seasoned with chipotle, served over a bed of quinoa with fresh avocado, corn, and black beans.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup cooked quinoa
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/2 avocado, diced
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons lime juice

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned.
  2. Drain any excess fat from the skillet.
  3. Stir in chipotle powder, cumin, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
  4. In a bowl, combine cooked quinoa, black beans, corn, diced avocado, cilantro, and lime juice.
  5. Divide the quinoa mixture into bowls and top with the seasoned ground turkey.
  6. Serve immediately.
