  • 1 cup quinoa, rinsed
  • 2 cups water or broth
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice

Instructions

  1. Rinse quinoa under cold water. Combine quinoa and water or broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and quinoa is fluffy.
  2. While quinoa cooks, heat olive oil in a large skillet over medium-high heat. Add chicken cubes and season with paprika, garlic powder, black pepper, and salt. Cook, stirring occasionally, for 6-8 minutes, or until chicken is cooked through and lightly browned.
  3. In a large bowl, combine cooked quinoa, cooked chicken, red bell pepper, yellow bell pepper, cherry tomatoes, cucumber, and fresh parsley.
  4. Drizzle with lemon juice and toss gently to combine.
  5. Serve warm or at room temperature.

  • For extra flavor, marinate the chicken for at least 30 minutes before cooking.
