Chef John’s Grilled Garlic and Herb Shrimp is a quick and flavorful dish featuring succulent shrimp marinated in a zesty garlic and herb mixture, then grilled to perfection.

Ingredients

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the minced garlic, chopped parsley, chives, thyme, red pepper flakes (if using), olive oil, lemon juice, salt, and black pepper.
  2. Add the peeled and deveined shrimp to the bowl and toss to coat evenly with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated shrimp onto skewers.
  5. Grill the shrimp for 2-3 minutes per side, or until they turn pink and opaque. Do not overcook.
  6. Serve immediately, perhaps with a squeeze of fresh lemon.

Notes

  • For best results, use fresh shrimp.
  • Do not marinate the shrimp for too long, as the lemon juice can start to ‘cook’ the shrimp.
  • Adjust the amount of red pepper flakes to your spice preference.
  • If you don’t have a grill, you can cook the shrimp in a hot skillet for a similar result.
