A creamy and tangy cheesecake inspired by The Cheesecake Factory’s famous Key lime version. Perfect for any occasion.

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup sour cream
  • 1/2 cup Key lime juice
  • 1 tbsp Key lime zest
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into a 9-inch springform pan.
  3. Bake crust for 10 minutes. Let it cool.
  4. Beat cream cheese and 1 cup sugar until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Blend in sour cream, Key lime juice, zest, and vanilla.
  7. Pour filling over the crust.
  8. Bake for 50-55 minutes until edges are set but center jiggles slightly.
  9. Cool in the oven with the door slightly open for 1 hour.
  10. Chill for at least 4 hours before serving.

Notes

  • Use fresh Key lime juice for the best flavor.
  • If Key limes are unavailable, regular lime juice works but adjust the quantity.
  • Do not overbake—the center should still jiggle slightly when done.
  • For a smoother texture, ensure all ingredients are at room temperature.
