A creamy and decadent classic cheesecake with a rich graham cracker crust, perfect for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a medium bowl. Press mixture evenly into the bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes. Remove from oven and set aside.
  4. In a large bowl, beat cream cheese and 1 cup sugar with an electric mixer until smooth.
  5. Beat in vanilla extract.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in sour cream.
  8. Pour filling over the baked crust.
  9. Bake for 50-60 minutes, or until the center is almost set.
  10. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.
  11. Remove from oven and let cool completely on a wire rack.
  12. Refrigerate for at least 4 hours before serving.

Notes

  • For best results, use full-fat cream cheese.
  • Do not overmix the batter once the eggs are added, as this can cause cracks.
  • To prevent cracks, you can place a pan of hot water on the rack below the cheesecake while it bakes.
  • Cheesecake can be stored in the refrigerator for up to 5 days.
