  • 1/2 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (alcohol-free)
  • 2 medium apples, peeled, cored, and finely diced (about 1 1/2 cups)
  • 1/2 cup prepared caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. For the crust, combine flour, 1/2 cup sugar, and salt in a medium bowl. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs. Press firmly and evenly into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden.
  3. While the crust bakes, prepare the cheesecake filling. In a large bowl, beat the softened cream cheese with 1/2 cup sugar until smooth and creamy. Beat in the egg and vanilla extract until just combined. Fold in the diced apples.
  4. Pour the cheesecake mixture over the warm, pre-baked crust and spread evenly.
  5. Return the pan to the oven and bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove the cheesecake bars from the oven and let them cool completely on a wire rack.
  7. Once cooled, drizzle the caramel sauce evenly over the top.
  8. Refrigerate for at least 2 hours, or until thoroughly chilled, before cutting into bars and serving.
