These Beef Kabob Bowls feature tender marinated beef and colorful vegetables, all served over fluffy rice for a satisfying and healthy meal.

Ingredients

  • 1 1/2 lbs beef sirloin, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large red onion, cut into 1-inch pieces
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 pint cherry tomatoes
  • Cooked rice, for serving

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, soy sauce, minced garlic, dried oregano, salt, and black pepper.
  2. Add the beef cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated beef, red onion, green bell pepper, red bell pepper, and cherry tomatoes onto the skewers, alternating the ingredients.
  5. Grill the kabobs for 8-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender-crisp.
  6. Serve the beef kabobs over cooked rice.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the marinade.
  • Feel free to use other vegetables like zucchini, mushrooms, or yellow squash.
  • If you don’t have a grill, you can cook the kabobs in a hot oven or on a grill pan.
