  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1/2 cup coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
  2. Stir in onion and garlic. Cook until softened, about 5 minutes.
  3. Add curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  4. Pour in diced tomatoes and beef broth. Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes, stirring occasionally.
  5. Stir in coconut milk and cilantro. Season with salt and pepper to taste.
  6. Serve hot over cooked rice.

Notes

  • Adjust the amount of cayenne pepper to your preferred spice level.
  • For a thicker curry, simmer uncovered for an additional 5-10 minutes.
  • Garnish with extra fresh cilantro or a dollop of yogurt if desired.
