- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 1/2 cup coconut milk
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Cooked rice for serving
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Stir in onion and garlic. Cook until softened, about 5 minutes.
- Add curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
- Pour in diced tomatoes and beef broth. Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes, stirring occasionally.
- Stir in coconut milk and cilantro. Season with salt and pepper to taste.
- Serve hot over cooked rice.
