A delightful dessert combining the rich creaminess of cheesecake with the comforting flavors of apple crumble.

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 500g cream cheese
  • 150g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 apples, peeled and diced
  • 50g brown sugar
  • 1 tsp cinnamon
  • 50g plain flour
  • 50g oats
  • 50g cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Crush the digestive biscuits and mix with melted butter. Press into the base of a springform tin.
  3. In a bowl, beat the cream cheese and caster sugar until smooth. Add eggs and vanilla extract, and mix well.
  4. Pour the cream cheese mixture over the biscuit base.
  5. In another bowl, mix diced apples with brown sugar and cinnamon. Spread evenly over the cream cheese layer.
  6. Combine flour, oats, and cold butter cubes to make the crumble topping. Sprinkle over the apples.
  7. Bake for 45-50 minutes until set. Let it cool before serving.

Notes

  • For a nuttier flavor, add chopped walnuts to the crumble topping.
  • Serve chilled for a firmer texture.
  • Store leftovers in the refrigerator for up to 3 days.
