A hearty beef stew inspired by Anthony Bourdain’s recipe. Perfect for cold days and packed with rich flavors.

Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 4 cups beef stock
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened.
  4. Stir in garlic and tomato paste, cooking for 1 minute.
  5. Pour in red wine and scrape the bottom of the pot to release any browned bits.
  6. Return the beef to the pot and add beef stock, bay leaves, and thyme.
  7. Bring to a simmer, cover, and cook for 2 hours or until beef is tender.
  8. Season with salt and pepper before serving.

Notes

  • For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew before serving.
  • This stew tastes even better the next day.
